The Heritage Technique

1. Preheating the Iron

Place your 8" or 10" cast iron skillet in the oven with 3 tablespoons of bacon drippings and preheat to 425 deg F. The iron must reach 425 deg F before the batter goes in; this is the non-negotiable secret to an irresistible crunch.

2. Mixing the Batter

Whisk together stone-ground cornmeal, flour, baking powder, baking soda, and salt in a mixing bowl. In a separate bowl, whisk buttermilk, eggs, melted butter, and honey. Pour the wet mixture into the dry and fold gently with a spatula until just combined. A few small lumps are perfectly fine.

3. The Sizzle Pour

Using a heavy heat-resistant mitt, carefully pull the hot skillet from the oven. Swirl the hot bacon grease along the bottom and up the sidewalls. Immediately pour in the batter. You will hear an aggressive sizzle as the perimeter begins crisping instantly.

4. Baking to Golden Crust

Return the skillet to the oven and bake for 22 to 25 minutes until the center is set and the edges turn deep golden brown. Remove, brush generously with warm honey butter, and serve piping hot straight from the skillet.
